Claude Chatelain, Loïc, and Aurore Guidat transform a wide variety of cow's and goat's milk cheeses on their family farm:
farmhouse Munster, tomme, grayeur, fresh goat's cheese, mature goat's cheese, goat's tomme, faisselles, and chic made from goat's milk. Authentic, local products that we incorporate into our cuisine.
We source our ingredients from the artisan bakery Au Pain de mon Grand-Père, where Bruno Dinel and his team uphold rigorous standards: French flour (some of which is organic, stone-ground in the Vosges), slow fermentation, and baking on stone or over a wood fire. The result: breads and pastries that are tasty, easy to digest, and long-lasting, made without additives or enhancers.
We source our products directly from Nicole (and her daughter Sophie), an artisan jam maker based in Châtenois (Alsace). In her family workshop, carefully selected fruits are cooked in the traditional way in copper pots, after cold maceration for at least 12 hours, and bottled hot without preservatives. The range, consisting of jams, jellies, and preserves, reflects expertise passed down from generation to generation.
